Crunchy “Pizza” Grilled Cheese Sandwiches

Looking for a method to make the best grilled cheese sandwich ever, with a super crispy crust? My crunchy pizza styled version is a mash-up of two classics - grilled cheese and pizza - and is easy to make with a few fridge and pantry staples.

Start by mixing 2 tbsp. of mayonnaise with 2 tbsp. of Parmesan cheese. Take two slices of your favorite bread and spread one side of each with the mixture. When grilled, this will make the outside of the sandwich really crunchy and flavorful.

Next, heat a grill pan or skillet over medium-low heat. The lower temperature will allow for thorough melting of your cheese and avoid burning the outside. Lay one slice of bread with the mayo/cheese-side down in the pan and layer the filling ingredients in this order:

  • 2 slices of provolone cheese
  • 2-3 thin slices of fresh tomato
  • 6 slices pepperoni
  • ¼ cup caramelized onions
  • 2 slices of mozzarella

Top with remaining slice of bread, mayo/cheese-side facing up. Cook until golden brown, 3 to 4 minutes per side. Slice and serve!
