Shrimp Taco’s for a Fast & Delicious Taco Fix!

Who doesn’t love tacos? I mean, the possibilities for fillings and toppings are endless. One version I like to whip up when I’m short on time but looking for something healthy and really satisfying is shrimp taco’s.

Keep a bag of shrimp in your freezer and a few staples on hand and you’ve got the makings for a quick and delicious meal that’s perfect for weeknights or even unexpected guests. Unlike meats, frozen shrimp thaws quickly when rinsed under cold water.

My Approach is Fast and Easy

First, I slice the shrimp in half to create perfect little tender morsels. The Rapid Slicer is my go-to tool for slicing those babies. Next, I drizzle them with a little olive oil and toss them with a quick seasoning I make by mixing together 1 tsp each of chili powder, garlic powder, onion powder, salt and pepper. A quick sauté in a cast iron skillet and your shrimp are ready to stuff in your favorite tortilla.

Toppings are a critical component and a great way to add extra veggies. Sautéed peppers and onions are a perfect way to amp up the flavor and sliced cherry tomatoes add great color without adding many calories. The last thing you need is something creamy to add a touch of richness. My vote? Avocados! They provide a velvety smooth texture and are a great source of healthy fats.

Of course, you can switch up the spices and veggies to your liking. Don’t like peppers and onions? You may fancy a cabbage slaw with chipotle mayo instead. Avocado’s not your bag? Swap in sour cream or Mexican crema. You get the picture.
