Shrimp Taco Bites
Looking for a simple appetizer or snack? My Shrimp Taco Bites are so easy and delicious.
Here is what you will need:
- 12 large or extra-large shrimp
- 1 Tbsp. olive oil
- Taco seasoning spice pack
- 1 cup of prepared or homemade guacamole
- 1 cup sour cream or plain Greek yogurt
I start by slicing the shrimp in half to make bite sized morsels. Coat them with a drizzle of olive oil and 1 or 2 Tbsp. of taco seasoning. Then sauté the seasoned shrimp over moderate high heat until pink.
Mix the sour cream or plain yogurt with a tablespoon taco seasoning. If you prefer a spicier sauce you can use adobo sauce from a can of chipotle peppers in place of the taco seasoning.
To assemble the taco bites, place 24 Tostito Scoops tortilla chips on a serving platter. I like to put the guacamole and sour cream or yogurt in plastic bags and cut the tip off so I can pipe about a teaspoon of each into each chip. Then top each chip off with one piece of cooked shrimp.
These are so simple and satisfying! They’re the perfect party appetizer or any time snack.
