Flatbread Pizza with Arugula, Prosciutto and Fresh Mozzarella

 

Need a fast meal, but looking for something a little different? My flatbread pizza with arugula, prosciutto and fresh mozzarella is just the ticket.

You need a few simple ingredients...flatbread, olive oil, garlic, arugula, prosciutto and mozzarella.

Here's how simple it is to prepare

It begins with choosing the right base for your pizza. The grocery store is full of delicious and ready-to-use flatbread and pizza crusts. If your carb-conscious, there are even some great options for high protein, lower carb versions that taste great. 

Time for the toppings

I drizzle the toasted flatbread with a touch olive oil, 1 tsp. chopped garlic,  and add a handful of arugula.

Next add about a half cup of halved grape tomatoes, 2 slices of prosciutto, cut into thin strips and top it with mozzarella. A touch of Parmesan wouldn't hurt either.

The final step

Bake in a 375 degree oven or cook on the grill until the cheese is melted and the crust is crisp. 

The crisp crust, peppery arugula, salty prosciutto and creamy mozzarella are the perfect combination for a super simple breakfast, lunch, snack or light dinner. It would also make a great appetizer for your next gathering.
