Cindy's Roasted Tomatoes Recipe

 

Roasting grape tomatoes concentrates and intensifies the flavor. Not to mention, if you have some tomatoes that have started to shrivel, this is the perfect way to use them up and not be wasteful. 

Here is what you need: 

A batch of grape tomatoes

Olive oil

Salt & pepper

Garlic 

Roasting pan

Use your Rapid Slicer® to slice the tomatoes in half and put them in a large bowl. Season with the salt and pepper to taste. Start with a tablespoon of garlic and then add some olive oil to coat. Mix everything together and spread out on a roasting pan. 

You have two options for cooking. If you don't have a lot of time, roast at 325 degrees for 90 minutes or at 250 degrees for up to 3 hours. 

The flavors of the tomatoes really pop and add depth and flavor to any recipe you put them in.
