When your low on time and need to whip up a quick meal, rotisserie chicken can be a life saver. They are inexpensive and so incredibly versatile.
One of my favorite things to do with a rotisserie chicken is make chicken salad. Instead of loading it with heavy, high calorie mayo, I created a version with a healthier yogurt and avocado dressing. Here's how simple it is to make.
Avocado Dressing Ingredients:
1 cup Greek yogurt
2 tbsp. Dijon mustard
1 ripe avocado
2 tbsp. lemon juice
1 tbsp. honey
1 tsp. salt 1/2 tsp. black pepper
Add yogurt, mustard, avocado, lemon juice, honey, salt and pepper to a food processor or blender and process until smooth.:
3 cups Rotisserie chicken, diced into 1/2 inch cubes
1 ½ cups grapes, halved
1/3 cup slivered almonds, toasted
Combine chicken, grapes and almonds in mixing bowl. Add avocado dressing and toss to coat.
How fast and easy is that! The grapes add the perfect touch of sweetness and the almonds add a satisfying crunch. So good!
